Vegan Almond Bark & Peppermint Bark

Happy Holidays! I’m excited to be in the holiday food mind set and wanted to try a classic to begin. I was trying to think of a unique recipe for peppermint bark to have something different but instead decided to create a second bark made with almonds to go hand in hand with the original peppermint bark. The almond recipe still has peppermint flavour in it making it suitable for any christmas party and gathering. The best part- both recipes include vegan chocolate so it’s dairy free and friendly for everyone!

I originally tried this with carob chips, and although they would work, I didn’t get the beginners luck and the recipe went sideways. I tried again with a different chocolate that worked much better. You just have to be mindful when melting the chocolate as too little or too much might result in what happened to me with a failed attempt. Aside from that this recipe is easy and relatively fast, I’m already looking forward to make more. These are the perfect homemade gift for family and friends! 


Ingredients:

Peppermint Bark:

  • One 225g bag of bittersweet dark chocolate (Make sure to read the ingredients that there are no milk additives)
  • Peppermint Extract (Amount based on preference)
  • Crushed candy canes
  • 1tsp coconut oil

Almond Bark:

  • One 225g bag of bittersweet dark chocolate (Make sure to read the ingredients that there are no milk additives)
  • Peppermint Extract (Amount based on preference) (Optional but recommended)
  • Almonds, blended until semi-chunky
  • 1tsp coconut oil

How to

OLYMPUS DIGITAL CAMERA(Peppermint Bark) 

  1. Start by having all of your candy canes crushed and your teaspoon of coconut oil. Place a piece of sprayed (non stick oil) parchment paper on a cookie baking pan or large plate.
  2. Melt the chocolate chips in 20 second intervals, mixing in between for a total of one minute. (You’ll end up stirring in between twice) After the first 20 seconds, add your coconut oil.
  3. Although after the 3rd 20 second microwave, it may look chunky still, take the bowl out of the microwave and stir quickly, it will continue to completely melt.
  4. Add roughly (more or less depending on preference) 1/2tsp of the peppermint oil and stir, work quickly so the chocolate doesn’t harden!
  5. Pour chocolate onto sheet and spread until its thick enough to break into decent pieces but not thick enough that its a big chocolate bar.
  6. Sprinkle candy cane pieces on top and use a utensil to lightly press down any larger pieces so they stick.
  7. Store in a cool area, fridge or freezer is best.
  8. Remove after completely hard and break into pieces ( I used a knife tip down and pressed down on the chocolate until it broke) Store in bags and keep in a the cold area.
